Banana Oatmeal Cookies [Eat] Vegan Friendly

During the week I try to go to the gym in the mornings. I usually make sure to have everything ready the night before and sleep as much as I can. I pack my breakfast and lunch, but sometimes I don't have time. This is when these Banana Oatmeal breakfast cookies come in handy.
These flourless cookies are delicious and nutritious! They are also vegan-friendly. The main ingredients are bananas and oatmeal. No processed ingredients!  The other ingredients are just add-ons. I like to add nuts, cinnamon, dried fruits, vanilla extract and sometimes dark chocolate. These are perfect snacks or breakfast bites.

This is an extremely easy recipe and you might already have the ingredients at home.

INGREDIENTS
  • 1 Bananas
  • 1 Cup of Oats 
  • 1 Tsp of Vanilla Extract
  • Coconut oil or vegetable butter or olive oil
  • Cinnamon to taste
  • 1/2 Cup of Nuts and Dried Fruits 
INSTRUCTIONS 
  • Preheat oven to 350 degrees. 
  • Blend oats until they look like flour. (use blender or food processor) 
  • Smash the bananas in a medium-large bowl, add blended oats and mix. 
  • Add the coconut oil or butter to the cooking sheet 
  • Place small dough balls to the sheet and smash them a little. (I use the measuring cups)
  • Cook for 10-12 minutes
