Grilled Salmon with Chipotle & Tamarind Sauce [Lent Recipe]

Last Wednesday was officially the beginning of Lent. Like many Mexican-Americans raised catholic, every Friday during Lent we do not eat meat. That is why I want to share one of my mother's favorite recipes; grilled salmon with chipotle and tamarind sauce. This is a delicious and healthy recipe.


For many of us, seasonings and salsas are very important, they deliver that spicy zest. I totally recommend using chipotle peppers La Morena, they have that delicious traditional Mexican flavor especially needed for this recipe. The best part is that you can find them at any of La Michoacana Meat Market locations.


Ingredients:
·   2 salmon fillets
·  1 can of chipotle peppers La Morena (7 oz)
· 8 fresh tamarinds (remove fruit from pods before cooking)
·  2 table spoons of sugar
·   1 table spoon of olive oil
·    Garlic salt to taste
·  1/2 cup of water


  
Directions:
  • In a pot, place 1/4 of a cup of water and cook the tamarind fruit, add 2 tablespoons of sugar and mix until the pulp is out of the fruit. Add half of a can of chipotle peppers La Morena, (if you like it extra spicy add the whole can) pour the remaining 1/4 of a cup of water and continue mixing, until there is enough sauce.  
  • In a pan add one tablespoon of olive oil and grill the salmon fillets, add garlic salt to taste.
  • Once the fillets are ready, add the chipotle with tamarind sauce on top.
*Suggested sides include, steamed rice, fresh salad and hibiscus water.

I Heart Tacos [Eat]

Torchy's Tacos has recently opened its first location in San Antonio. As I heard they were “damn good” I decided to be the judge of it.

Let me tell you that I consider myself a taco expert, (since I grew up in Mexico) and these are not your regular Mexican tacos, they are more like Tex-Mex. Torchy's is very unique, so if you want to try something different and delicious this is your taco place. They also, offer a delicious green chili queso that comes with chips, you MUST try it. It's amazing! 

My taco order consisted of “The Crossroads” [smoked beef brisket with grilled onions, jalapeños, cilantro, jack cheese and avocado, served with tomatillo sauce on a fresh corn tortilla] and "The Republican" [grilled jalapeño sausage, shredded cheese and pico de gallo, served with poblano sauce and on a fresh corn tortilla]. 

This restaurant has captivated my heart and my palate. I will definitely go back very soon!

Valentine's Look that will Steal your Heart



Valentine's Day is just around the corner and what a better way to celebrate LOVE than by dressing up for the occasion. Last weekend at H&M I bought this cute top with printed hearts. I thought this is a perfect piece for Valentine’s Day. I love it!  What's even greater is the price! Another great steal at only $17. I matched it with this black skirt, also from H&M, and to keep warm, I threw in this faux fur vest and my ankle booties.

I love to wear my heart on my sleeve [literally] and I hope you do too!

Mini Road Trip to Driftwood



Every time my family is in town I try to take them to places they've never been before. My parents came to visit so I decided to take them to a BBQ restaurant called SaltLick. We had to make a mini road trip, since this restaurant is located an hour away from San Antonio, in a small town called Driftwood, Texas.

This was the second time I have been to this restaurant and it’s always packed (which means it’s really good)! We were on the waiting list for about an hour, so we waited in the patio while enjoying the live music. They also had a small stand with popcorn and fresh lemonade. It's worth mentioning that you can BYOB! Also, this is a cash only establishment.

When you enter the place you can admire and smell (they smell good) the big BBQ pits. Remembering the delicious smell makes my mouth water. They served our food pretty fast. I ordered the Thurman’s Choice, which consists of sausage, brisket and ribs, this plate comes with beans, potato salad and coleslaw as sides. The food was delicious, it was totally worth the wait and the drive.

After finishing our succulent lunch we went next door to see the wine cellars. For only $10 you can taste 5 wines. I would've try them if I wasn't so full. We sat under a tree and enjoyed each other’s company and the cellars.

This is a great place to have a nice family day.
