Nopales Guisados (Sauteed Cactus)

Thanksgiving is around the corner and that means eating and drinking a lot. Hey, there is nothing wrong with that! But what about after that day? Don't you usually feel pretty guilty? I do since nothing stops me from eating everything served on the table. 

When the party is over, it is time to start making smarter choices.  That is why I decided to share with you all this healthy recipe. Nopales Guisados or Sauteed Cactus. Nopales or Cactus are high in fiber and vitamins such as A, B6 and C. You can serve them for breakfast, lunch or dinner. 






INGREDIENTS:


  • 1 cup of cactus, rinsed and chopped into bite-sized pieces
  • 1/2 chopped onion
  • 1 chopped tomato
  • 1/4 cup chopped cilantro
  • 1 whole Serrano pepper finely chopped
  • garlic to taste
  • lime to taste
  • salt to taste
  • avocado
  • 1 tbs of olive oil




Put the table spoon of olive oil in the pan at a medium/high temperature and add the garlic and chopped onions, then the chopped tomato and the Serrano pepper.  After mixing all those flavorful ingredients add the cactus and chopped cilantro.  Add the salt and let it cook for about 10-15 minutes. 

Enjoy them with baked tostadas, avocado and lime.

Pho! The Real Deal

Winter has arrived and so has my craving for steaming hot bowls of soup. If your sentiment is as mine, here’s a simple appeasement, pho, specifically from Pho Hong Phat. Pho is Vietnamese for noodle soup. Although far from average tasting, it consists of a delicious broth, rice noodles, herbs, and meat. The combination of these ingredients results in an exquisitely tasty bowl of not so traditional “noodle soup”. My words cannot express the unique flavor, so why not let your taste buds do the enlightening.

I usually order the chicken pho and add all of the following, that are always provided, but optional to use: bean sprouts, basil, cilantro, jalapeños, extra lime, pho sauce and Sriracha. If you like beef order the brisket or flank pho and for you vegetarians and veggie-lovers, vegetable or tofu pho. While you wait, order the chicken spring rolls as an appetizer, they are superb!

Wurstfest



If you are or will be near New Braunfels, TX during the next week, you should definitely stop by Wurstfest! Every year this small German-influenced town, hosts a sausage festival, better known as Wurstfest. This unique and fun festival offers great food, live music, carnival rides & games, and German & domestic beer among other things.

This weekend I went and had a blast! I ate everything that I could; jalapeño and cheese sausage on a stick (a must!), fried pickles, roasted corn, German potatoes & beef sausage, pastries and frozen sangria (also a must!). I enjoyed all of this while taking pleasure in the live music and great atmosphere. 

I totally recommend this festival. Bring your family and friends and enjoy a great time!

Leopard Dedra Flats

Leopard print is one of fall's most popular trends. You can find this print in shoes, scarfs, dresses, tops, etc... I've been obsessed with leopard shoes since last fall. I wanted to buy some expensive leopard sneakers, that I saw online, but later I came across these Target "Dedra Flats". I compared both products and learned they were both made of the same material. The only difference was Target sneakers cost half the price. I payed only $24.99, this was a STEAL! Plus, they are very fashionable.
