Roasted Broccoli, Chicken & Sweet Potato [Eat]


I've been wanting to post a recipe for a while but didn't have the time. Finally, I found the time and a healthy recipe, worth posting. I had a sweet potato and was not sure what to cook, I researched and found this delicious recipe.
The original recipe has slightly different ingredients. I just used whatever I had in hand. The outcome was an easy, healthy and delicious dish. I had this for dinner, took some for lunch and there were still leftovers for my fiancée.  



Ingredients:
1 medium sweet potato, cut into squares
1/2 onion, minced
1 chicken breast
1 1/2 cup of broccoli
3 garlic cloves, minced
1/2 cup of nuts (I used pecans, almonds, and pistachios) 
1/2 cup of dried cranberries 
Olive Oil (I used spray)
Rosemary
Salt and Pepper 
Paprika 

Directions:
Preheat oven to 350 degrees. Place sweet potatoes in an oiled pan and spread them. Cook them for about 15 min, toss them half way through. 

Remove cooked potatoes and add onions, broccoli, chicken, garlic, rosemary, salt, pepper and the paprika. Add some olive oil spray and toss so they are coated evenly. 

Return to oven for 16-20 minutes or until chicken is fully cooked. Toss them halfway through as well. After chicken is fully cooked add the nuts and cranberries and enjoy! 

As a side, I cooked 1/2 cup of red quinoa and ended up mixing it all and it tasted amazing!
