Healthy Banana Bread [Eat]

I hate when any of my food goes to waste, especially fruit! I had 2 ripe bananas and some greek yogurt so I looked up a recipe for healthy banana bread. I also had recently bought some whole wheat flour from Trader Joe's and wanted to see how it tastes.

INGREDIENTS

·        2 eggs
·        1/2 cup olive oil or coconut oil
·        1/3 cup honey or brown sugar
·        1/4 cup milk or Greek yogurt
·        1 teaspoon vanilla extract
·        2-3 mashed ripe medium bananas
·        1 3/4 cups regular whole wheat flour or plain all-purpose flour
·        ½ teaspoon ground cinnamon optional
·        1 teaspoon baking soda
·        ½ teaspoon salt
·        1/2 cup chopped walnuts (optional)

DIRECTIONS 
1.   Pre-heat oven to 325F. Grease a 9x5 inch loaf pan and set aside.
2.   In a medium bowl, whisk the flour, cinnamon, baking soda, and salt. Set aside.
3.   In a large bowl, beat eggs, oil, sugar, greek yogurt and vanilla for 2 minutes. Stir in the bananas, flour mixture, and walnuts (or any other add-ins of choice).
4.   Pour batter into greased pan, sprinkle with brown sugar and walnuts pieces (optional). Bake for 50-55 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes, slice and enjoy!
