I can't believe 4th of July is upon us. I have the perfect recipe for whether you are hosting or going to a party. This is the most simple recipe ever. The trick is finding vegan marshmallows. As you may know, marshmallows contain gelatine. Gelatine is made from animal bones and collagen, the most common source being pigskin. That sounds a bit gross, even though I love taquitos al pastor!
The good thing about this recipe is that you are making sure everyone can eat them. I found these vegan marshmallows called Dandies at Central Market. They are made out of tapioca syrup, cane sugar filtered water, tapioca starch, carrageenan (seaweed), soy protein and natural vanilla flavor. They taste pretty much the same as regular marshmallows, just a little more sweet and not as fluffy. The recipe is pretty easy and fast. Also, make sure to add the fruit the same day you will be eating them because they can turn a bit soggy. 

INGREDIENTS:
  • 1/4 cup of coconut oil
  • 1 package of Dandies Marshmallows (10 oz.)
  • 5 cups of Rice Krispie Cereal 
  • 1 cup of blueberries
  • 1 cup of chopped strawberries
DIRECTIONS:
  • In a saucepan melt butter over low heat. Add marshmallows and stir until melted. Remove from heat.
  • Add Rice Krispies cereal. Stir until well coated. 
  • With a buttered spatula or wax paper evenly press mixture into a pan coated with cooking spray. 
  • Let it cool 
  • Add strawberries and blueberries on top.
