Fluffy Vegan Pancakes

On Sunday’s I crave pancakes. Since I had no eggs at home I decided to look for a vegan recipe. I was willing to use some apple sauce since I had a couple of them. Surprisingly there was no need. I looked up the recipe and was shocked when reading the ingredients. I had them all in my pantry!

A while back I was looking for a crockpot and my husband very kindly bought be an Instant Pot, which is more of a pressure cooker. I was a bit disappointed because it had so many settings and all I wanted was a simple old crockpot with high, low and warm settings. My husband's uncle gifted us a crockpot and I was very happy! After a few years, I rediscovered the Instant Pot and started learning more about it and now I am in love. Now, I want to cook absolutely everything in it!

My husband invited me to lunch last week, he suggested several places near my office one being Guillermo's. He always swears by one of his coworker's recommendation, which is pretty accurate, most of the times. I've passed through that place so many times and I was always curious to stop by, but never did.

Two weeks ago I had brunch with my cousin at Barbaro. I had no clue what to expect, but I have heard good things about this place. The place looks vintage and super cute! I loved the atmosphere. There was only one waiter and you can imagine the service was a bit slow.

I have been to this place like about 4 times and it never disappoints me. My cousin, which happens to be vegetarian wanted to go out for lunch, so I suggested Moshe's. She wanted Grimaldi's (which is amazing too) but since Moshe's is only open until 3pm it is harder to go than Grimaldis.

Since I have been craving soups lately, I decided to look for a vegetarian pozole recipe. You see, my favorite pozole is the green one because the tomatillos give it a tart flavor, which I love. Plus according to my Mom, you can basically add all the green veggies you have in your fridge, including peppers, spinach, lettuce, cilantro, kale, etc. That sounds like tons of vitamins and pretty healthy.

I had lunch at the Granary a few weeks ago. I was there with my coworkers. We ordered a few items to share in the middle. They ordered beans, potato salad, brisket, pulled pork, turkey, and salad (for the vegan folks). I had been there before but I do not remember being so delicious.

Brunching at Cappy's [Eat]

Last weekend was fiesta and if you live in San Antonio, you know that it is a big deal! The city shuts down and we all party! Well, I had a very eventful weekend with my husband, family, and friends. On Friday, we were all off from work and headed to the cactus show at the Botanical Gardens. After that we headed to La Fonda had a couple of margaritas and had a delicious lunch. I wish I would've taken better pictures, but I was having so much fun with my mother in law, aunt, and hubby that I missed the opportunity of taking any good pics. Well, I know I am making this a long story, but La Fonda and Cappy's are owned by the same family, and they are both delicious.

I can't believe Lent starts so early this year, the same day as Valentine's!  That means meatless Fridays. Although I have mentioned before that my diet is 80/20; 80% vegetarian and 20% eat whatever I want. Vegan Poblano Mac and Cheese [Eat]

I have been trying to eat healthier by having a vegetarian/vegan diet during the week and allowing myself to eat animal products during the weekends. Also, I started cooking more, maybe because I got awesome wedding gifts for my kitchen. The deal is that we are having a Thanksgiving potluck at work and one of my coworkers is vegan (he doesn't eat any animal product, not even honey).

The Most Unique Restaurant in Puerto Vallarta [Eat & Travel]

During my bachelorette trip, my MOH made reservations at this super cool restaurant called "La Leche" which means "The Milk". This place is one of the most unique restaurants I have ever been to. Everything inside is white, like milk. The decorations are minimalist and contemporary which gives this place a chic and trendy atmosphere.
